I understand your decision regarding this.
To follow in your "red enemy idea" perhaps, as the player levels up, the %rate to encounter red enemies could increase slowly. It wouldn't be absolute, but if you're trully overpowered, you get to have your ass kicked more often ;)

Large parties mean a lot of micro-management, thus, longer average fights. If you are to work with larger parties, you need to make each battle "more memorable" which means you need to have positive elements in battle that can occur only if there are more party members. Otherwise, it will ...

It would be a big bet, and perhaps would draw away casual gamers, but what if enemies levelup on their own? Say that every second spent in the game, their get stronger (but relatively slowly). Most of the time, the player would not notice it at all, but if he would wait endlessly for a moment, then ...

To you need artistic references?

- "Knight armor" - right pauldron is more proeminent, it is a tight-layer of plate armor all over, much like a breastplate, silver-colored.

or use?

- "Kight armor" If at all relevant, very efficient against slashing weaponry and fire.

I've joined to help the team with level design.
